I tried this recipe & wanted to share my experience. I. Made the batter exactly as described. Then I took a nonstick griddle like the one shown in the recipe. It was a disaster. The batter just stuck to the pan. So I discarded that & took out my cast iron pan that I use to make dosas. It came out great! Only thing it didn’t do was puff up as shown. But tastes great. Also I had to move the pan away from the fire, splash cold water on it , add the batter & then move it back to the flame as shown & works great!
