Hi Leslie! I just enjoyed your spaghetti and meatballs video. I come from an Italian family and I would like to share with you how we make meatballs. My Nonna came here from Italy and this is how she made meatballs. She added 1 egg per pound of meat, used crushed saltines, garlic, salt and pepper, 1 tsp of ground sage and grated Romano cheese. She always browned her meatballs before adding them to the sauce so that the sauce wouldn’t be greasy. I just thought that you might like to see another way of making meatballs!
I have a great tip for sweetening the sauce to take the sharp edge off the tomatoes: Carrots! Sautee about 1/4 to 1/2 cup of finely diced carrots with your onions and garlic. They are mellower than sugar or honey. It's just the right level of sweetness. And you get the extra nutrients the carrots provide. It's my preferred way to sweeten sauces. 🙂
Yummy! I love spaghetti and meatballs. Try cooking the tomato paste for a few minutes in the pan after sautéing the onions and garlic before adding the canned tomatoes. It really adds to the depth of flavor.

Our family always ate as a family every night for supper. After we got older and either married or working elsewhere in the state where it was necessary to live closer to where we worked, the family dinner was changed to Sunday's after church and for those of us that lived elsewhere were expected to come to dinner or have a good excuse why we were missing.

A person who went to cooking school said adding sugar to bland canned tomatoes made them taste like fresh and ripe tomatoes. Chef Jeffrey says to add sugar if you add tomato paste to cut the bitterness of the paste.
I don’t know if you saw the news about the 8 year old boy, Hunter, who was killed by gun yesterday in Mount Airy. He was my grandson’s classmate and friend. My daughter and son-in-law have not told him yet. Please pray for that family and for my grandson, Jax. 😢🙏🏼
I don’t see that bacon grease as liquid gold . It is more like heart attack in a jar. Keep having those dinners. I use to do that but now everyone is going a different way. That makes me sad.😔
Don't the uncooked meatballs add a lot of grease to your sauce? I've never done it that way but if it doesn't add a lot of grease to the sauce I will give it a try.
My (now deceased) Mom and Dad were full-blooded Italians. Mom always fried her meatballs first, before adding them to the sauce. Also, there should be one large egg added per pound of meat.

A pinch of two of baking soda and you can omit the sugar! Perfect

Use a few bay leafs 🍃 in your sauce while it's simmering. It significantly enhances the flavor of spaghetti sauce.. ❤ looks delicious 😊

Cut up a carrot and add it instead of sugar, remove carrot when sauce is done..
Or you could grate that carrot….and no one would know they were in the sauce!
