There is a new update coming December 7th that will add more courses and other improvements. This is a game that we are getting to play while it is still being developed into its final vision. I think this is a game that will keep improving for us until it leaves Early Access designation on SteamVR.
I've thought about that as well, but haven't shared that feedback with the developers because I don't think I would want the Kart UI raised to place the wheel more in line with where it is being used physically in my racing rig. Having in-game more in front of you works for cars (so perfect in GT7), but Karts are designed to have wheel further down like they are in real-world. I haven't unlocked Karts yet in GT7. Want to see how they are handling it before having more opinion on it.
I only have the Logitech Pro Racing Wheel & Pedals for first hand experience, but I haven’t seen any credible first hand report that other brands (Fanatec, Thrustmaster) are not working. The game was on sale for $10 in the US for PS+ subscribers. If still on that sale, I recommend you take advantage and find out. Alternatively, wait until they release a demo, then find out.
T300 works, and it a lot of fun with one hand in the wheel and another to use itens. Unfortunately the wheel dont have any force feedback, so maybe it will be added later. Lets hope the game finds its audience and grow.

Finding this game enjoyable needs a few more updates like adjustments on steering wheel in car to level with hands in car and 90fps

I can't get my wheel to work at all, I have a g29. Control options simply says "grab to activate." Dunno wtf I'm doing here
