    Looks like they got a little hot and the fat ran out also with citric acid you dont need to leave it in the fridge overnight.

      Might have just cut that clip out of the video but we poured in ice water when doing the mix with the fat and seasonings. Cheers!

    Why not mix all dry ingredients together before adding to meat?

    The nitrates have not had a chance to do their job you shouldn't be advising people to cook and eat it before it blooms

      You are 100 percent correct you could do the fry test prior to adding the nitrates
