In fairness guys it was the time of day; think showing up to the Vegas strip at 8 am. As you noticed the main boulevard is a white-collar business district (and one of the most plastic surgery clinics per square km in the world), but by night the side alleys are full of nightlife that goes until 6 am the next day.
Immediately outside the commercial business strip are the residential areas where real estate prices are one of the most expensive, if not the most expensive, in all of Korea. But it wasn't always this way. Historically, living "south of river (Han)" meant you didn't really have money, but the rapid development and real estate prices made millionaires out of the people who bought in before the boom.
After dark, rich sons of CEOs will pull up in their exotic cars similar to scenes out of Dubai or Monaco, the women are dressed to the nines, there's music all around. The clientele are slightly older (mid 20s to early 30s) than the other party district, Hongdae (college students; early 20s).
Psy's 2012 Gangnam Style was mocking the "new money" culture of Gangnam and the army of posers trying too hard to make people think they're part of it (of which Psy plays such a character).

One more tip (I just discovered your channel): don't know how far you're into this trip, but if you'll spend at least one meal to really splurge, don't automatically count out "mall restaurants" or those inside luxury hotels. Where I'm from (the US), mall food has the reputation as "perfectly acceptable; perfectly mediocre" but in Korea at the high-end malls like Coex that you visited (and the Hyundai in Yeoido and Lotte mall near City Hall), they hire some of the country's best chefs (and don't overlook their basement levels which have decadent food halls like the kind on Oxford st in London; e.g. Selfridges). Same at expensive hotels.
My personal preference are small mom-and--pop restaurants with fierce loyalty from the locals, but mall food is definitely not mid like it is in my home country. Enjoy your trip.

Guys, thank yous for visiting Korea~~ How about traveling outside of Seoul? Korea countryside scenery is nice... How about trying Gangchon rail bike in Chuncheon? or Jeonju's traditional food? Also, Itaewon at night if you want to have fun~~~
