In fact, Matteo is also better than both of them. And let’s not forget those tragic interlopers, Pasta Grammar, who look like they’re in it for a free meal.
Vincenzo has real respect for Italian food. So does Matteo.
@@lizbay6625 I agree with everything you write. Vincenzo is the king. The Pasta Queen is an embarrassment. She dresses like a streetwalker. Minchilli’s blog is filled with spelling and grammatical errors. I don’t even read it any more. She repeats a lot of information. And the way she’s trying to make her not-too-bright daughter a food star is absurd. As for Pasta Grammar, they look desperate to figure out a thematic hook. The woman looks old enough to be the guy’s mother.
Roman guy here. I think one of the reasons why Fettucine Alfredo never became popular around here could be the fact we do eat that kind of dish, but we just call it "pasta burro e parmigiano" (pasta - any kind, usually penne or rigatoni - with butter and parmesan), that is the typical thing you make when you're fridge is empty. Or when you're 12, you're parents left you home alone and you think about the easiest thing possible haha

So, what I read, is that Romans have their own Mac and Cheese variant x) (ni judgement, we also have here in Wallis Switzerland where we use just raclette cheese melted in the pasta and it's also the "don't have anything in the pantry/home alone and lazy" x) I don't think you can make a lazier variant than ours, tho)
@@NWolfsson I don't fully agree with your "variant" definition, but yeah, you can call it like that. If you get the same ingredients in different dishes, doesn't mean they're all variants. It really depends on too many things (cooking method, the state of the ingredient, etc.). In "pasta burro e parmigiano" the parmesan is grated on top, it's not melted, so it does taste different, it's not just the look. But I get you can think of it just as an italian over-categorization haha

Certo, non significa che non ce vole niente però meno so elaborate le ricette e meno è probabile che il risultato sia na caciara de sapori indefiniti.

I come from a family that puts ketchup on _everything_ and even *I* was shocked when he said it! The audacity! The nerve!
Its so beautiful how they honoured you by insisting you eat the dish with the golden untentils. That was such an amazing moment. I wish I could visit Italy but I don't think I will ever be able to travel.
I love how Matteo goes into Italian mode, and even his gestures change. "Prince" Tomaso is an absolute fox. And how wonderful, those gold utensils (probably real gold) from Douglas Fairbanks!

I am lactose and I'm telling you, I'd risk my ass and toilet just to have some of that Fettuccine Alfredo
In truth, you could switch out the cow’s milk Parmigiano for the sheep’s milk Pecorino Romano. It would still be cheese and butter, and the creaminess would still be present. Also, true Italian parmigiano, the 24 or 36-month kind, would have much less lactose because it’s a hard cheese. Hard, aged cheeses like Swiss, parmesan, and cheddars are lower in lactose. Sheep and goat milk cheeses are a completely different kind of cheese and you should be able to eat them.
This might be criminal but u can swap the lactose here. butter with vegan butter/margarine and the parmigiano with pecorino. Though you must know the flavor profile will be different and quite noticeable as margarine is usually very sweet and has distinct aroma. But you combined it with pecorino anyway which is a whole different world than parmigiano
Aged cheeses have very little lactose
Take an enzyme pill and go nuts!

This reminds me a lot of American vs authentic Carbonara. Non-authentic Italian recipes tend to cheat and add cream bc it takes more skill to get the fat (butter, cheese, egg yok, whatever) to emulsify with the pasta water and create the proper creamy texture like in real pasta dishes.
It’s really not that hard to get the emulsion right, I think ppl are intimated by it for no reason

There used to be a restaurant in Toronto on Yonge Street across from the Eaton Centre called Pastaficcio's. They were famous in the late 70's and early 80's, at least in Toronto. I had my first alfredo there and loved it. I believe it had ham in it.
Purists serve a purpose, and that is ultimately to free the rest of us to enjoy food of our own choosing.

The Olive Garden association is either based on ignorance, or lies. I’ve eaten the dish in the US way before I even heard about the Olive Garden. I remember going to the Olive Garden and saying, “Oh, they have Fettuccini Alfredo?”

I think a Cacio e Pepe and Alfredo mashup would be a synthesis that is better than its two parts.
I like the simplicity of south Italian dished and the high quality of the ingrediences at the same time.
This combination is unbeatable.
But, to be honest I myself would try to slightly combine some parsley, ham or roasted walnut just to get a little optical kick and crunch in it.
Well, for sure you found the perfect guide in Rome, Mr. De Carlo (ciao Francé!). I have been at Alfredo's in Rome but chose to try out the classic carbonara instead. The Fettuccine Alfredo are very choreographic, but as an Italian, I find this dish too simple. That's the typical dish we would prepare at home when there's nothing more than cheese (Parmigiano, which you will find in every Italian home) and butter in the refrigerator, so... Yeah, that's the reason why Fettuccine Alfredo never became so popular amongst the Italians, I guess. Way too simple.

Probably my most memorable entree was carbonara made by an Italian chef boyfriend of a friend of mine one afternoon at their apartment in San Francisco. I've had carbonara since but nothing has approached that magical meal.
So cute. Here on the West Coast, we don't hear Italian accents! And the one guy looks so American, that I would never guess that he was Italian.
I would love to try authentic Fettuccine Alfredo. I always loved "American Fettuccine Alfredo" but as with everything you know that traditional is typically better. When they brought that plate out to Matteo I literally gasped. It was beautiful and so very simple.

Being the entire time in front of a picture of "Max Mariola" is an experience in and of itself.
We call it " pasta in bianco", it's very quick to prepare, sometimes we do it without butter, only with olive oil extravergine and parmigiano !!

I think the reason Americans use cream in "Alfredo" is because the "butter" here doesn't have enough fat in it, so they make up for it with the cream... just a thought.

There is a lot of argument over Italian food. I had an Italian friend tell me once that Lasagna made with Ricotta was not authentic. I told him "I make it the same way Grandma Gina does!"

I've been there. I think that in the US they add a bunch of cream and stuff which they don't in Italy. Or maybe they add garlic or something. At that restaurant I think it's basically only the cheese.

When I was in Rome I went to many restaurants and the waiters didn’t know what fettuccine Alfredo was, I went for lasagna but lasagna was without meat I was like what? 🤣 I still loved it
in italy the cuisine is very regional and restaurants may or may not have other regions dishes in their menu. also menus are evolving: until 20 years ago, in central italy you could only have the roman trattoria, the classic fish restaurant, the fine dining place. now the influence of fine dining has pushed some of the other categories to include some modern twists in their menus so you can have all the hybrid categories. my favorite is the bistro like type of thing: modern variations of classic dishes, nice decoration but not fancy, small seasonal menu to keep the prices medium-low. if you stay in italy for long enough you can learn to tell the kind of menu of a restaurant just by eyeballing the place. but if you can’t do that you gotta do two things:
1. ask the locals.
2. beware of places which seem to have all the classics on the menu. if you’re in rome and you see Lasagne alla bolognese on the menu, that’s a big red flag for a tourist trap
