I heard pepper and tomato seeds can last for years. If I don't use all of my spinach seeds the year I purchase them, the germination rate drastically diminishes the following year.

Yeah. It depends on the vegetables. Okra, onions, etc have a short shelf life. It seems tomatoes and peppers are much longer.
