As a general rule, I think holding the sustain pedal for each bar should work pretty well. Sometimes you might need to change it more often, e.g. when there's a harmonic change in the middle of the bar (such as in bar 16 and 32). This might also be a little different depending on your instrument - just try out what sounds best, and trust your ears!
Why are you delaying beat 1 on every bar? I know you are not going to believe me. Put your audio into a program where you can see the waveforms. Put a click track onto the audio and you are absolutely delaying beat 1.
Of course I believe you. There’s a misunderstanding on your part: It’s not my goal to be in sync with a click track. Quite the opposite - I want the piece to come alive and breath. Delays and variations in tempo are part of a human performance, as opposed to a machine. The way I played it felt right to me in the moment I recorded it. Whether you like it or not is a matter of taste.

Just play the notes that's out of your piano's range to an octave higher
