  • INGREDIENTS REQUIRED:--
    25 Raw mangoes
    Oil -------- 2 kilo
    Cumin seeds -------- 1/8 grams
    Fenugreek seeds -------- 1/8 grams
    Mustard seeds -------- 1/4 grams
    Turmeric powder -------- 1tbsp
    Red chilli seeds -------- 1 tbsp
    Red chilli powder (three mango) -------- 1 kg
    Rock salt --------- 2kg
    Ginger garlic paste -------- 2 kg
    Ginger cloves -------- 15-20
    PROCEDURE:--
    STEP 1 :--
    On a medium heat,bring the oil to a gentle boil for 10 min and as a final flavouring add Cumin seeds,Mustard seeds and Red chilli seeds at the end and turn off the stove.
    Put the oil aside and let it gets warm i.e., make sure oil is neither too hot nor too cool
    Add 2kg ginger garlic paste into the oil and mix well without lumps.
    STEP 2 :--
    Slightly roast and make a powder of 1/8 grams of cumin seeds,1/8 grams of Fenugreek seeds and 1/4 grams of Mustard seeds separately.
    NOTE : Only Cumin and Fenugreek seeds need to be roasted slightly
    Take a big Bhahona (barthan) and add Cumin powder, Fenugreek powder, Mustard powder,1tbsp of turmeric powder,1kg Red chilli powder, 2kgs Rock salt, 20 garlic cloves and mix well.
    STEP 3 :--
    Now add the oil which is mixed well with ginger garlic paste (step 1) into the Bhahona which contains all the powders (step 2).
    Then add chopped Raw mangoes into it
    Take a plastic or glass container and store in it
