OATMEAL ENERGY BALLS | Simple postpartum snack

  • These oat balls are perfect for any time but I find them particularly great to make just before giving birth as an easy, filling and healthy snack to quickly pull out of your freezer. You can enjoy them during labor, postpartum and/or while breastfeeding. My toddler and husband are both also huge fans so I suggest making lots if you have a family.
    This recipe can be adapted and altered to work with whatever you have on hand and to make almost any flavor that you enjoy. Here are a few of my favorite combinations.
    THE BASE
    1 cup rolled oats
    1/4 cup nut butter
    1/4 cup maple syrup or liquid sweetener of choice
    2 tbsp ground flaxseed (I forgot to add this during filming)
    Dash of salt
    1/2 tsp vanilla (I often leave this out)
    ADD TO BASE
    Blueberry Muffin:
    1/2 cup dried blueberries
    1/4 tsp cinnamon
    Chocolate Chip:
    1/2 cup chocolate chips
    Oatmeal Raisin:
    1/4 cup raisins
    1/4 cup chopped pecans
    1/4 cup toasted coconut
    1/2 tsp cinnamon
    Double Chocolate:
    2 tbls cocoa powder
    1/2 cup chocolate chips
    After mixing everything, allow to set for 30 minutes in the refrigerator before rolling into balls and freezing. You can also press into a casserole dish and create your own granola bars.
