As to why Pablo suddenly died?...I don't know, If Star Wars taught me anything, People can lose the will to live just from being incredibly sad so maybe all the sudden rejection and fall from grace got the better of Pablo and he just gave up?

Pablo's quest always just kills me. I know he's not a super important character or anything, but just something about his story and how it plays out. And yes, I always wear the beret for the rest of the game. That said, I love most of the minor things in this game. Though I will say, of the side quests, the only one I don't really care about is the hotel one you keep alluding to. I'm not saying you shouldn't show it, I feel like this entire game needs to be seen. But it's the only one that is... unremarkable to me. Heck, I even sort of enjoy playing everyone you can in Pool. Even if I'm not the biggest fan of the Pool minigame. Also there is one more thing I don't know if you're going to actually show off, but it does involve the Globetrotters. It's something I found out about on accident one playthrough. It also may not be doable until post game. It's nothing super major, but if you do end up showing it off, you do. If not, you don't.
There were only 2 people in the game that had Pablo's paintings, you and the Art Dealer.
And the Art Dealer was with him at the Oasis ... hmmm ...

Some artists suffer through depression, so that might’ve been a factor in it, I assume.
