I seem to be stuck on 365 word online version, I downloaded app but it is only opening in word 365 online, so my word version looks different than the one you are describing, it is not giving me the options you have, not giving me desktop word version, how do I correct this?

Yes you can refer this for 2019 version , but there are some updates in 2021 version though .

Yes, the online version may have limited capabilities compared to the desktop version of Word 365.
