On the blue one...what is the other adjustment for? The piece perpendicular to the push out pin, which can be screwed backwards and forwards? It seems to be spring loaded.

Yep... watch tools. I recently bought a fully metal tool it's for removing links from bracelets I think. But my bracelet has screws and I just tighten/remove them with a knife from EDC Multi-Tool =) yep... And I have a, spring bar tool. I also have many spring bars!! a box of sping bars for all sizes of lug widths. Yep.
They wanted £50 to replace the battery and resize my links on my 5 year old £150 Tissot watch...not a chance...I brought everything I need off eBay for £50 and did it myself and it was so easy... Check out my channel, I have a playlist called 'watch out'.... :-)

Those watch back remover tools are not "universal". I have a "Jeopardy" TV show watch whose back has tine round holes for some sort of special too. I have an adjustable back removal tool, but these tiny holes need sewing needle size tool, so no way the normal tool can work. When the tool fails, the result is scratched, ugly back.

Take it to a watchmaker..happened to me too I had to take it they have proper tools for the job..
