Pickle juice is the best chicken wing brine

- These crispy chicken wings that are prepped in a pickle juice brine are out of this world good.
This has to be the easiest way to brine chicken wings and the taste it imparts into the wings is incredible.
Main Ingredients:
1kg of wings (2.2lbs)
2 x tablespoons of Avocado oil
1 and 1/2 cups of pickle Juice, I used Picklehead Dill Pickle Juice
Seasoning Ingredients:
1 and 1/2 teaspoons of aluminum free baking powder
1 teaspoon of garlic powder
1/2 teaspoon of onion powder
2 teaspoons of smoked paprika
1/2 teaspoon of kosher salt
1/4 teaspoons of finely cracked black pepper
1/4 teaspoon of cayenne pepper
Hydration:
2 x beers

My favorite pickle juice comes from a jar of "Claussen Hearty Garlic Pickles". It's just what it sounds like: garlicy pickle juice. I love that stuff, mainly put it in my bloody marys but will have to try this chicken recipe soon, looks great. Thanks!

Hi I’m trying this now. I put my brine container with the wings in the fridge but I am not cooking until tomorrow afternoon. Is that okay or will ‘curing’ ruin the recipe??

Hey Shuey whats the best way to keep the temp up for multiple kettle kone cooks? Do you add some fuel ontop or clear out the kone and start again?
Mate I can usually punch out 3 half hour cooks on one load of fuel using original Heat Beads. What fuel are you using and how many cooks in a row and how long are you trying to achieve martyn veele? 🍻

Hey Brendon Silver, this is the Weber Gourmet Grate System. I bought a few of them as I find them a lot more versatile and you can buy a few extras to go in them like the wok, griddle, pizza stone, sear grate, etc. Cheers mate🍻

100% Nick Eyles, it works great on any cut of chicken as i=the pickle tenderizes and the meat and this allows the salts and flavours of the brine to penetrate the protein fibers more easily. 🍻
