Perfect Prime Rib on the Weber Smokey Mountain!

  • Today I cooked up a beautiful prime rib on my Weber Smokey Mountain 14.5" smoker, this turned out fantastic and I highly recommend you try it! Of course I was using my ‪@thegoodcharcoal‬ Premium Lump Charcoal for the smoker and the kettle! I love the way it burns, smells, and that it's such a clean burning fuel! You can get yours at Home Depot or Sam's!
    Smoke at 225 till internal temp reaches 120 degrees, then do a quick and hot sear over an open fire to finish it off! I got the technique of the garlic butter drip from ‪@SmokinJoesPitBBQ‬ , if you are watching me you are definitely already watching him!
    The charcoal chimney came from ‪@tigermccoolbbqcofirecupsin5037‬ so you definitely need to check him out as well! Sorry those weren't your fire cups... I forgot to put my order in 😂

    Isn’t there someway you can take the top off your Weber smoky mountain and just sear your steak on the bottom since there’s already a fire going on down there? They make smokers that look exactly like Weber that are meant to be used as grills as well. Isn’t there someway that you can just use the smoky mountain as a grill? You only need to use it for a few minutes to sear that meat. it would kill me to start up an entire grill just for a few minutes of fire.

      You can remove the top half of the WSM and get to the coals, I might be able to throw a grill grate over that with the fire ring in there, I'll have to try that out! But I definitely used WAY more charcoal than needed to sear that steak. You could use half a chimney and get a perfect sear.
