Mipha probably knew that it was not her destiny to become the sage of water. She wanted to help link fight against calamity ganon. That's why she became the Zora Champion instead. She smiles knowing that Sidon becomes something even more important to stop a greater evil if it's not Calamity Ganon, then it's the Demon King. Mipha probably has the same attitude of "If it cannot be me, I'm so glad it was Sidon instead. I know he will do wonders for the Zora."

Ok crazy theory
So the botw champions and the totk sages pretty much have the same powers and are related (except maybe revali and tulin bu they could be distantly related for this theory to work)
- mipha and sidon can control water in many different ways
- daruk and yunobo can create a fire shield
- revali and tulin can create a gust of wind
- urbosa and riju can summon a thunder strike
What if the champions survived the calamity and a few years later the demon king arose from his seal they would be the sages since they hsave the same powers and ansestry as the actual sages ( again revali and tulin can be distantly related and both be descendents of the sage of wind).

It’s because the champions were the next ones in line to awaken as sages but they perished before they could so when the time to fight Ganondorf came only their closest “relative” or “descendant” could take their place, that’s why there’s no new sage of Spirit because Mineru never had a kid as far as we’re aware, the closest could be Purah as the Sage of Shadows thanks to the hint they gave us at the ending of the game

I suspect that Mipha and Sidon’s powers are the same. But work in different ways. Mipha heals with her powers and Sidon is able to cleanse water. What if instead of a healing power that Mipha had, it was some type of cleanser, getting rid of Link’s injuries.
