I'm trying this tomorrow, after I get that sugar thermometer. We eat a refined sugar free diet which means we have to rely on honey for all the sweet things and caramel is NEVER an option. I so can't wait to try it!!! Thank you! You're the best!!!

Oh! These are so delicious! I made them just before thanksgiving. I was worried about packaging them up for Christmas baskets this year, so here is what I did: In my fondue pot, I melted 12 bars of vanilla bark (an entire pack) and added 2 teaspoons of lemon extract. I rolled each piece of taffy into a ball, cut it in half and made it into a crescent shape. I then rolled this in the chocolate, then placed each into a candy cup. I sprinkled a bit of ground almond on top and they are to die for! Thanks so much for sharing!
My candy thermometer looks a bit different than yours, Sacha but you're right, I thought I was not going to use it much but now I can't believe I didn't have one before. I use it for everything! Even for measuring my oil when I need to fry something in a pot. Lovely recipe and as always, lovely video.

Ahello Sasha, love your recipes. In this taffy can you sub coconut cream for the heavy cream? If so would you only use the cream and not the water part?

Hey Sacha! I actually tried this except instead of adding cream, I added peppermint extract. I've seen flavoured taffy and honey taffy but never flavoured honey taffy, and what I got was really delicious! Why don't you give it a go? :D
Oh, and I also tried adding some milk. It made the taffy a lot softer and less hard. When I put the ball of taffy onto the table it would start sagging down onto the table. Can't really be chopped up into pieces, but I tried swirling it on a chopstick and it was great too.
I made honey hard candies last night and am thinking about making taffy today. I’m a beekeep so I have bunches. My hard candies are like honey taste x a million. I almost wonder if you got a bad bottle of honey :( it really upsets me of all the imitations on the market. +Steven Duchesne I have to admit I don't know. Honey is thicker and reacts differently to heat than maple syrup (one is flora, one is fauna). I may have to try - or if you do before I do - let me know : ) It would taste incredible if we could get it to work! I LOVE MAPLE SYRUP EVERYTHING!! haha

Hi Sacha, so it turns out that Maple syrup has a lower taffy point than honey. I followed the instructions and came out with a very hard maple candy. I wasn't really prepared for that, and so the candy doesn't have any sort of visual appeal. I will be crushing this up and using it to top butter cookies and make Christmas bark. The appropriate temperature for Maple Syrup taffy appears to be between 234 (soft) - 240 (more chewy) Fahrenheit (112 - 115 Celsius). I'll give it another go and let you know what happens.
I like the recipe, however you never mentioned putting the honey in. You just heated the cream and then you somehow had the honey and cream mixture together???? Not sure when you added the honey in?
+michelle preweda Heating sugar really does need a thermometer and not guess work; the the sugar changes texture from soft, hard and crack quickly and you need to stop heating at just the right time to achieve the results you're after.
I tried making these, and it didn't quite go to plan. The candy refused to harden, it just stayed as a thick paste at room temperature and only hardens when frozen. Can anyone help with fixing this?
+vanity miliano The answer is yes and yes, but it just wouldn't be Cream and Honey Taffy anymore ! There are a few different combinations and ways to make Taffy in all different flavours.
I know but I am allergic for the honey they have here :( so that why I asked and i could use liquid whiping cream instead of the double cream or is that to difference. Because i really like you're easy recipes with my disease its not easy to be in the kitchen for a very long time so i am really glad with you're easy recipes :)

+Totally Sacha I just found what is heavy/double cream only to know it isn't sold here in Brazil D: I found some people here try to replace with milk cream (here in Brazil we call it 'creme de leite'), but as I found, it can't replace heavy/double cream for some recipes.
