I don’t understand why this method is not out there more, I made an expensive pistachio cheese cake ( and I say expensive because those nuts ain’t cheep ) for Christmas only to have the bottom come out soggy due to the water seeping through. I was very disappointed but the cake was delicious. Thank you for sharing.

I use a 10 inch silicone cake pan around my 9 inch spring form cheesecake pan and put it in water. It works.

Omg lol I wish I saw this video before I used foil 😂 it definitely went through and I know my amazing crust is most definitely soggy now. But it was a test run thankfully but omg thank you so much for the cake pan tip. I’m going to try to find a big enough cake pan tomorrow and if not for the time being I’ll use the oven bag. I have to agree. I'm a guy learning how to bake (imagine how dumb we can be about things). Sometimes these stereotypes go too far: The best videos I've found had a question and gave you the answer, almost immediately. Most of those videos were by women or women editors. Yes, women editors. They have to step in and trim all the stuff the artistic scatter bomb made--which is a nice way to say someone had to be the adult in the room.
(There is one guy, including me sometimes, who rambles on for 15 to 30 minutes and doesn't even remember to answer the question he posed.)

Hello, thank you for the video dear .. I made 2 cheesecakes and both ended up having a soggy crust .. I’m going to try to bake it again tomorrow .. is it possible to keep the spring form pan in a glass pan instead of a metal pan before putting it in the roasting pan??
That's an awesome idea .. unfortunately I have springform pans that have handles and they won't fit in a round cake pan
I put canning rings underneath of course before I watched this. Will see how it goes. I’ll have to use this idea next time lol

Me too. Because I am an idiot and I thought I was being a smart guy with the removable bottom baking pan to get it out after. I figured it out in time and triple wrapped it with foil but it still got water in somehow and the bottom third was sweet eggy rubber.

How do you take the cheesecake out of the oven without sloshing hot water all around. Also I have the same question for when you want to check on the cheesecake for doneness.
What's the point of the water bath if the tin is not in direct contact with the water?
The warm water surrounds the pan creating a gentle heat and a steamy environment. This allows the cheesecake to bake more evenly from the outside inward.

Hello. I came across your video because I was searching for a method of baking cheesecake that would avoid the "soggy bottom" syndrome. I'm very intrigued by your idea but I was hopeful you would have displayed the finished product. My concern is that by placing the springform pan in to the cake pan and then inside the roasting pan with the water that it will prevent the water from coming right up to the exterior of the springform pan and will diminish the desired heat transfer from the water bath. Hope that makes sense.

How can you cook anything un just hot water, i dont understand. How many minutes you have to keep your cheesecake in water, doesnt water get cold in few minutes in the pan. I am really confused
I just put my cheesecake in the oven. I poured the water into the pan to about 3/4 outside the cake pan. However, the pan is floating. Is this normal? Did I use too much water?

So how do you get it out of the oven once it’s done without sticking your oven mitts in boiling hot water or risking spilling boiling hot water everywhere if you try taking everything out?? 😧
The water bakes away in the time that it takes a cheesecake to cook. It's only real purpose is to become steam, so it'll be all or almost totally empty.
You can pour cold water into the hot water to make it warm so you’re no longer dealing with boiling water but just a hot pan. To avoid spilling water, avoid using a shallow pan for the water bath but something similar to the one in the video. To start off you only need like an inch of water.
Some recipes says to let the cheesecake cool in the oven with the door slightly cracked . The pans are not so hot
Or you could the silicone Easy Bath Cheesecake Wrap which provides better heat conduction between the heated water and the batter in the springform pan which allows the batter to bake more evenly from the edges to the center.

I don't do that , I just cook mine in the microwave, got a recipe for it ages ago when microwaves just came out....gosh I am old. Tastes just like New York Style Cheesecake.
