    Recipe written down:
    1 1/3 cup flour
    1 tbsp baking powder
    1/2 tsp salt
    3 1/2 tbsp sugar
    1 1/2 cup buttermilk
    2 eggs
    1 tsp vanilla
    1 tbsp butter
    2 tbsp oil

      Hi, theres a mistake here. Its 1 3/4 cup flour since he said three quarter not one third cup. :)

    CORRECT RECIPE:
    - 1 3/4 cup all purpose flour
    - 1 tbsp baking powder (not soda)
    - 1/2 tsp salt
    - 3 1/2 tbsp sugar
    ( wisk all together)
    In a separate bowl
    - 1 1/2 cup room temp buttermilk
    - 2 room temp eggs
    -1 tbsp melted and cooled butter
    - 2 tbsp safflower oil (or any other flavorless oil)
    - 1 tsp vanilla extract
    (Wisk all together and add to dry ingredients)
    For extra fluffiness add 3 beaten egg whites when ur batter is mixed up.

      do you think i could just add the egg yolks first and then add 3 egg whites. instead of 2 full eggs and 3 egg whites?

      i think that would be too much and give you a souffle. if you want to experiment, add 1 whole egg, 1 yolk and then whip the last egg white and fold it in.

      +dipti islam Google says add 1tbsp of vinegar to milk, but honestly, yogurt yields AMAZING results. I use greek unsweetened and it works wonders.

    That's an American pancake, which is completely different from a proper British pancake. A British pancake is flat, insipid, rubbery, complains about the weather, and tastes of nothing apart from the topping.

    I've made your pancakes today, with a good teaspoon of cinnamon into the batter, too, and topped them with honey, chopped macadamia nuts, almond slices and a few crusced speculoos cookies. What a heavenly flavour...

    I have a kitchen conundrum about cleaning wooden cutting boards. I'm always wondering what the best way is because when you work with any product that leaves liquid on your cutting board it will 'sink into' the wood or stain the board (for instance with beets or berries). Do you have any tips? Love your videos!

      I'm with you, Valeska. I'd also like to know how to get food odors out of wooden cutting boards, if it's at all possible (e.g. garlic, onion). I've tried rubbing salt and a cut lemon on them, but no luck. I've also tried switching to bamboo cutting boards per someone's advice, but they absorb food odors just the same.

      Cut a lemon and use it to clean with. It's acidic and it helps it up nicely.

    I'm so happy to get this recipe, love fluffy pancakes. My mother always put baking powder in hers and didn't stir too much, but the three egg white sounds great. Can't wait, thanks so much Thomas!

    Thank you for this video. I will be making this recipe for breakfast this morning. I don't know if it it just me, but it would be helpful if future videos could be louder. The audio on this video was somewhat low on my maximum volume setting. I had to listen to it in a very quiet room.

    I just made these they came out perfect! My batter was kinda too thick so I added a teaspoon of water and they were still fluffy !! Great recipe thanks Thomas !!💙

      Either a a scoop or if you don't have one, you can use a 1/4 cup measuring cup. That's what I use.

      Rebecca Moore yes. I realized a when I was in highschool that it really helps, when you add a lot, it turns fluffy. just don't add too much or else you'll taste it, and make sure you add it to dry ingredients so it's well combined so you don't get a mouth of baking powder, and if you don't trust yourself, throw the dry ingredients together and sift it into the wet ingredients and mix gently.

    what can i use instead of buttermilk? or can i use them invividually? and if so how much of each? thank you for ur helpful videoes

      +Maryam Shehab you need the acidity of buttermilk in order for it to react with the baking powder, making the pancake fluffy. So because of that, you can always substitute it with a mixture of 1 part milk to 3 part yoghurt, or adding lemon juice, vinegar, or cream of tartar to your milk.

    to be honest i didn't believe this recipe at first. everyone says that they make the "fluffiest pancakes" but most end in disappointment. These are so fluffy i'm gonna die FOR REAL. and keep in mind i didn't have that many eggs so i just beat the egg whites from the 2 eggs in the dough. SO FLUFFY.

    I made a vegan version of this today and they were the best pancakes I've ever made! I'm so happy I found this recipe! I kept the quantities the same, but substituted the milk for unsweetened soy milk, the eggs for flax eggs and the butter with vegetable oil.

    Hey Thomas -- I noticed you used the "slotted fish spatula" for flipping pancakes, which appears to gently "grab" the pancake so they flip nicely without sliding off (most spatulas have the disposition of being too slippery). I never thought about this before - neato! :) Also, kudos for mentioning a) don't overmix the batter and b) don't press on the pancakes, as both of those concepts seem to be overlooked! Lastly, thanks for mentioning how to test the baking powder beforehand to make sure it's activated; I never thought to do that (though I do go through a tub of BP pretty quickly from frequently making biscuits).     If you get flat pancakes just put some dulce de leche on them and roll them.

    I'm so confused, some videos use buttermilk or regular milk for pancakes or waffles. What is the difference in which milk you use?

      Buttermilk is the liquid that remains after churning butter; it is more acidic and hence reacts more with the leavening agent (in this case, the baking powder) than regular milk, yielding a fluffier pancake. Regular milk, besides being less acidic, has a higher fat content which adds richness to your end product. Hope this helps. Cheers!

      Alexis Mka I believe buttermilk adds the soft and fluffy texture to the pancakes.

      If you do use buttermilk, then you should replace part of the baking powder with baking soda.

    Thomas! Could you do a video on how to adjust the softness and fluffiness of breads, like for example cinnamon buns. Do u add more milk or more butter or less flour or what. Not really sure which type of flour to use to get the best results too, whether all purpose flour or bread flour

    Anybody thats thinking of doing this recipe, do try it! I did it and it was great! Though i thought the extra 3 egg whites was kind of a bother, so what i did was just seperate the original 2 eggs called in the recipe and whip the 2 egg whites and mixing the yolk white the rest of the wet ingredients and folding the whipped egg whites at the end. My pancakes really did turn out fluffy :)

    If you don't want to overmix the batter because of the gluten, then will a non-gluten flour actually work better for pancakes?
