fyi start frying the guanchalie in a cold pan to render the fat then add garlic for extra flavour... once cooked to fragrant, add the pasta water and pasta then off the stove and add egg cheese mixture to avoid overcooking. add more pasta water to prevent cooking the egg is always the safest bet. and finish off with more cheese and pepper.
I'm no expert cook here, but i have some experience in doing pastry. In pastry, we have the pastry cream (custard) and creme anglaise (english cream) which are both similar in recipe except that one has cornstarch while the other doesn't. In making pastry cream, you will cook it till it boils at around 98 degrees iirc, whereas for creme anglaise you have to cook till its 70-73 degrees. Beyond that it will curdle and become scrambled eggs just like in the vid. So.. if i can make a connection here... the starchy water from the pasta is VERY important here not only to thicken the sauce but also to raise the minimum temperature at which the egg mixture will curdle. So technically the sauce will never curdle even if it is boiling given sufficient amounts of starchy water. So yeah,,, splash more water like Jamie does.
It became scrambled eggs bc IH stoves take a lot longer to cool down so the residue heat cooked the eggs. Next time it might be better to take the entire pan off the stove for a moment before pouring the mixture in!
