    Do you have recommendations for a mini tart time size? - the top is around 6cm but the tops of the fluted pastries I have cut get squished on the top because the tart pan is around 2.5cm deep (the way I want it!)

    It doesn't stick to the muffin pan? That's what I'm nervous about since I don't have any cooking spray.

      I've never had that issue no - they always just slide out!

      it should be, search for "muffin pan with perforated bottom"

      if you dont plan on using them straight away, you can freeze them :)

      Did you use self raising flour instead of plain flour?
      Or maybe skip weighing down the centre with bits of paper and pie weights?
      It could also happen if you don't chill the dough before putting them in the oven.

    I've been looking for a tart shell recipe that uses shortening but everyone seems to use butter.

      @kimtee8961 you could probably substitute the butter for shortening (1:1) but I’d add some butter extract so it has some flavor
