Did you use self raising flour instead of plain flour? Or maybe skip weighing down the centre with bits of paper and pie weights? It could also happen if you don't chill the dough before putting them in the oven.

It doesn't stick to the muffin pan? That's what I'm nervous about since I don't have any cooking spray.
I've never had that issue no - they always just slide out!
What did you put on top of the tart before baking ? What kind of nut is it?
it's rice and dry chickpeas

I've been looking for a tart shell recipe that uses shortening but everyone seems to use butter.
@kimtee8961 you could probably substitute the butter for shortening (1:1) but I’d add some butter extract so it has some flavor
You can use cooking oil in place of Butter
