- Today’s recipe is so incredible that you may look to try it right away after you watch this video, especially if you’re into vegetarian, gluten-free, grain-free, healthy and tasty bread recipes!
Instead of grain flour, our incredible mini loaf breads are made with red lentils! This incredible legume is low in sodium and saturated fat, high in potassium, fiber, folate, and plant polyphenols that have an important antioxidant activity. They are packed with healthy nutrients (imagine in just 1 cup of raw red lentils you’ll get: 45.91 g of protein; 20.7 g of fiber and 14.19 mg of iron for a total of 687 calories). On top of all those impressive nutritional benefits, they taste great and they are so versatile that you can use them in the classic soups and stews or in making the best gluten-free bread, you would think of, like in today’s recipe! In order to make our lentils mini loaf breads even more nutritious and filling, we added cottage cheese (26 g of protein) and eggs (12 g of protein) to boost their protein content even more!

Bake in a preheated oven for 40 minutes at 350 °F / 180 °C
Ingredients:
These amounts made 9 lentils mini breads
1 cup (190 g) red lentils (687 calories)
2 eggs (148 calories)
1 cup (250 g) cottage cheese or any soft cheese of your choice (240 calories)
4 tbsp. (55 g) olive oil (480 calories)
1 tsp. (6g) salt
black pepper (optional)
½ tbsp. (7 g) baking powder
1 tsp. sesame seeds or other seeds of your choice for garnish (optional)
1 tsp. poppy seeds or other seeds of your choice for garnish (optional)
These qualities made 9 red lentils mini breads. Per each mini bread you’ll get ~173 calories and ~9.3 g of protein!

did you soak the lentils overnight as opposed to a couple hours? All I have are green and brown lentils at the moment so I'm curious if soaking them overnight would be more ideal.

Yes, if you want to keep the taste plain and close to regular bread, you can simply skip the eggs and add some extra cottage cheese. But, I think, you’ll still get good lentils bread like these if you prefer to replace eggs with a banana or flaxseed. The breads will be sweet in the first case and will taste the flaxseed in the second. If you try one or the other, let me know how it works 🙏

That hollow scenario is likely due to a slightly runnier batter. Try to really really drain well the lentils from the extra water after you rinse them. That might have been the cause. Also make sure your baking powder is fresh 😇

That’s a good question, actually! I always keep any kind of bread in the fridge (up to 1 week) or in the freezer (for a few weeks or even months) including these lentils bread ones that contain eggs. I would think, it’s safer to leave them no more than a day or 2 outside the fridge 🙏

Yes, you can use a regular muffin pan. They may need slightly more time to bake thoroughly (45 to 50 mins). Try the clean knife after 40 mins baking to check.

I baked as bread loaf, after taking out of oven it sank from the middle, bottom part is quite dense..any help.what i did wrong( i used gluten free baking powder, did it make the difference?)

I don’t think the gluten free baking powder is the cause of dense center! It could be because of a runnier batter (have you drained the lentils really well)? It could also be the baking time. It takes way more the height of the bread is too high (it could be that, actually). I recommend to use a larger baking pan that you can get used to the right batter consistency and baking time before baking in a loaf pan 🙏

Had the same problem a few have mentioned. The loaves looked great at 20 minutes when I turned them in the oven to make sure everything was baking evenly. They rose and looked great. At the end of another 20 minutes they had fallen. I let them cool and sliced one open and it was a bit dense inside. Not sure what to try differently. I soaked the lentils over night in the fridge. I rinsed and let them sit for 30 minutes in the strainer to make sure they were well drained. I mixed until very smooth. Over mixing is the only thing I can think happened.

Since you said they rose and fall, I’m only thinking of the baking powder. Is it fresh enough? Or the heat, was the oven preheated before that it won’t heat up too high at the beginning before temperature goes more constant?
I really can’t explain how much easy, I found it, working with this lentils batter (yes, it’s a bit dense but it’s very easy to work with)! I’m experimenting a sweet version, and despite many mistakes, the result is always amazing (great shape and texture like with regular flour each time) 🙏
@@zaracooks oven was definitely preheated. Pretty sure baking powder is fine as I haven't had anything not rise. Since it rose and fell, I don't that that was it. I'm thinking I'll try to use the blender to puree the lentils and cottage cheese. Then maybe Mixon the egg more gently. Perhaps best the egg whites separately and fold them in? Not sure. Whatever 8 did, they did not hold their structure. I have the rest of the package of lentils to try again. The taste is good so I'm not giving up!

Yes, definitely, you can use a regular muffin pan 🙏
If you make it in a loaf pan the baking time will change, so please monitor it.
Also, you can slice the loaf of bread n keep the slices in little individual zip lock bags according to however many portion sizes you need at a time. I do that with bread slices.

No, you don’t really taste lentils. They have a taste quite plain and rather like a pain brioché.
Yes, to get this kind of fluffinesses and neutral taste it has to be red lentils or skinless mung beans. They too, have a “floury” texture and a plain taste 🙏

No pre-cooking needed for this recipe, you just need to soak the lentils to get softer and lectins free. They have plenty time to cook while baking for ~40 minutes at 350°F 🙏

Yes, you can use a larger loaf but be careful to not fill it too high (may be half way through or slightly higher), that it can bake through evenly. The baking time, I will suggest between 45 and 50 mins at 350°F in a preheated oven (preheating is important) 🙏🥰

As far as the batter is really smooth, that’s OK to use a hand blender (some are really powerful). And, yes, to me olive oil is at the top of what I prefer to use, but you can use any other oil you prefer 🙏

To have it this close to regular bread, it has to be red lentils, yellow lentils or mung beans (they have in common, being skinless). Regular lentils will give a texture, taste and colour quite different 🙏
You said the recipe will work in a single, larger loaf pan. What size do you suggest? 8.5" x 4.5"? 9" x 5"?
It doesn’t matter the size, you just need to make sure you fill it only half way (maximum 2.5 to 3 cm height ) for results similar to the ones here in the video. If you fill up high, it might be more dense in the middle and requires more baking time (up to 1 hour) 🙏

Red lentils are light in texture so it's best suited to make bread. If using the brown or green they are heavier lentils hence they will be dense in texture. Try using 2 Tbs of Psyllium husk to the batter once in the bowl, not to the blender. Let it rest for 10 mins n it will be lighter in texture.

You can simply skip it! The breads might be slightly drier without a source of fat or you can add an extra 1/4 cup of cottage cheese 🙏

Macros for 1 mini bread are as follows:
Energy: 181 calories
Protein: 9.69 g
Fat: 9.61 g
Carbohydrates: 14.48 g
Fiber: 2.3 g
Iron: 2.23 mg
And if you have concerns about diabetes, you shouldn’t worry too much about the carbs since lentils and legumes in general are even beneficial for diabetics. They tend to decrease blood glucose (see the finding of this research) 👇

Yes, you can. I would recommend not to fill the large loaf pan too high (slightly above the middle will be great) to make sure they cook well in the center. The cooking time, I thing 45 to 50 mins is still OK 🙏

I made these and they taste great, but not sure why I can’t get mine to rise like that ☹️
Lentil is much denser than regular flour, so that it doesn’t rise too high. It will rise maximum like a 1/3 of what you pour. Also, may be the batter was a bit more runny than it should (you need to strain completely from water once you rinse, that can make the batter too wet and rather compact in the center). It takes some try and fail to get the best result. Then you will really enjoy how good and versatile working with red lentils can be 🙏
I made this and baked them in a stoneware 4 loaf pan and even at 70 minutes they were very toasted on the outside and very gummy inside. I am thinking they need to be a smaller capacity or lower oven temp and longer bake time. Any advice?

I think it’s either the batter is more runny than it should be or you poured too much batter per loaf cup or maybe both! Mine were 2 cm thick after baking. Also, even if they look sticky, they’ll get more solid once they’re cooled down. I suggest you stop baking (it should not take more than 1 hour) and sorry again for your struggle 🙏

@@caseyallan7483 I used a standard size scoop we have here in Canada which is the equivalent of a 1/4 cup full with liquid!
I poured ~1 1/2 ice cream spoon in each loaf cup. That is the equivalent of a full 1/3 cup. I hope this is clear enough and helpful 🙏

That’s right, most breads made with legumes tend to get more denser over time. I usually put mine in a toaster oven for 5 mins. They almost get back the texture they have when just out of the oven 🙏

I haven’t used green lentils before, the texture is quite different. But if you can’t have red lentils, try with mung beans (skinless version). They also have a texture suited for these gluten free breads 🙏
how do you get rid of the strong lentil smell which to me is the biggest turn off?
I find the lentil smell of these breads made with red lentils is way more soft than if made with regular lentils. But if you still find it overwhelming, you can add herbs and spices you love. For example dried oregano, fennel, cumin, etc
How long do they need to soak exactly?
At least for 6 hours. I do personally soak them overnight in the fridge. It’ll help get a softer batter that is more airy 🙏

You can use a larger loaf pan (I have a vegan lentils loaf recipe already available here 👇), but you need to bake for a longer time (at least 1 hour, and check with the clean knife to verify if it’s well cooked through).

Can green lentils be used and or dried split peas?
The texture will never be the same with green lentils in terms or texture and taste. Red lentils are skinless, so you’ll feel less the taste of lentils on these breads. You can use yellow lentils if you can find them (they’re also skinless).
I haven’t tried split peas, they are more dense legumes, I would anticipate the breads will be more compact (less airy)🙏

I’m thinking all these days soaking, they have probably sprouted 😅 You can use them rather for a salad or in a soup. Sorry to say, you need to soak (no more than 24 h) fresh ones for these wonderful breads 🙏🥰

I haven’t tried it myself to answer objectively, but I don’t think canned lentils are suited to make these breads, because it takes some starchy component you find only in the raw lentils 🙏

when the bread was sliced laterally, it looked as though the lower edge was not fully baked. Otherwise, they look very good.

I know you need to experiment for a bit to get the right batter thickness, the right amount (the thicker the bread is the more dense it gets in the bottom) and right temperature. I do the clean knife (it should come up clean) for both the mini and large loaf before I stop baking 🙏
Alternative of yogurt?
Other than yogurt, you have sour cream for example or you can use any non dairy cream or milk (best taste with cream) you like 🙏
What can we sub for cottage cheese
It’s mentioned in the recipe description, you can use plain yogurt, greek yogurt or sour cream instead of cottage cheese 🙏
What’s the nutritional facts? Total carbs ,how sugars, salts?
I provide sometimes the calories per serving and some other macros and minerals (like protein. iron or calcium). I don’t have the time to do it for all macros unfortunately and I think it’s important that people do these calculations for themselves for better choices since they have the ingredient list.
But just to answer your request. The carbs in the recipe came mainly from the lentils (I used low fat cottage cheese, so it adds a little to the total carbs).
But, overall, you have ~20.2 g of carbs per loaf and 3.16 g fibre 🙏

Well, in theory, yes you can get a bread with just lentils, water and baking powder. Just be aware the bread will be more dense and less soft without the oil, the eggs and the cottage cheese (or other dairy or non dairy creamy product). 🙏

They look good but I hope they are light and not dense and heavy.
They are relatively dense because of the lentils but I won’t say heavy. The bread overall is quite airy and delicious 🙏

This might be unpopular opinion, but I baked these last night, been wanting to try it for weeks! I was so excited!
Unfortunately, the taste was not to my liking …I found the egg-taste overpowering. The texture was good, a bit like a scone / biscuit. But I just couldn’t stomach the flavour ☹️
Watching the video again, I definitely followed the recipe perfectly.
I totally understand that this bread may not please everyone 🤗
If you want to try it again, you can skip the eggs all together if that what you find repulsive. Eggs give the bread some fluffiness. You can just add an extra 1/4 cup of cottage cheese and see if you like it better without the eggs 🙏
Use flax eggs: to make the equivalent of one egg use 1 tablespoon of ground flax and 3 tablespoons of water. Give it a quick stir with a fork, wait 5 minutes and there you have it. So for two eggs, double that. Vegans do this all the time.
