Choux au Craquelin - Custard Cream Puffs with Cookie Crust

  • Cream puffs are quite the time consuming ordeal. So if someone gives you homemade cream puffs, they either really like you or they were really bored.
    Feel free to split the custard and flavor it however you want. I did black sesame by just adding a tbsp of ground black sesame seeds. It’s really easy to customize your cream puffs. But classic vanilla custard tastes good too.
    Crackled cookie crust:
    4 tbsp softened butter
    6-8 tbsp flour
    4 tbsp sugar
    Pâte à choux (the dough for the puff):
    4 tbsp butter
    1/2 cup water
    1/2 cup flour
    2 eggs
    Bake at 400 deg F for 30 mins
    Custard:
    3 egg yolks
    2-3 tbsp cornstarch
    4 tbsp sugar (more if you want it sweeter)
    1 cup milk
    1 tsp vanilla extract
    1 tbsp ground black sesame seeds
