How to make a simple, frugal spinach, mushroom and feta lasagne.

- A delicious lasagne is a treat any day of the week. Recipe below:
What you need.
2 tbsp olive oil, plus a little extra for greasing
300g spinach
300g mushrooms, sliced
2 garlic cloves, finely chopped
400g tin chopped tomatoes
basil and oregano (handful of fresh or 1 tsp of dried)
400ml crème fraîche
300g lasagne (fresh or non pre-cook sheets)
150g cheese, grated
salt and pepper
What you do.
Prep time: 15 min
Cooking time: 1h
Step 1
Preheat oven to 180°C/Gas 5. Heat half the oil in a large pan. Add the spinach leaves and cook for a couple of minutes until the spinach has wilted. Remove the spinach from the pan into a large bowl and season with salt and pepper.
Step 2
Add the rest of the oil to the pan with the mushrooms and garlic and cook for 5 minutes or so until the mushrooms are browned. Stir in the tomatoes and herbs, bring to the boil and cook for a couple of minutes more.
Step 3
Remove from the heat, season to taste. Add to the spinach. Mix the crème fraîche with the and season. Lightly oil an ovenproof dish. Starting with the lasagne sheets first, layer with the mushroom and spinach mixture, the crème fraîche and cheese (at least a couple of layers of each). Finish with a final layer of lasagne and spread over a little crème fraîche and cheese to cover.
Step 4
Bake for 30-40 minutes or so until the lasagne is tender and the top golden brown.

Thank you. I’m hopeful that you will do meatless meals that do not contain any dairy. I do vegetarian dishes like your lasagne today for my family but I cannot eat dairy. It’s been a life long problem. Thank you for the idea of making the cheese sauce with crème fraîche and granpadano.

Love lasagne. Great idea making the cheese sauce like that, and crumbling feta in; making bechamel/cheese sauce for it always makes it feel like I'm cooking two dinners at once with loads of pots and pans to watch and wash!

Looks so tasty! Top garden tip for you try leaving the lettuce roots in the ground, cut the leaves off about half an inch from the ground and the lettuces will just grow back!!

I love your cooking videos. The lasagna looks amazing. I'm not fond of lasagna made with ground beef so this one would really suit me. However, i have a big stockpile of pasta and no lasagna noodles so i'm thinking i might try these ingredients mixed with a short cooked pasta and topped with the cream sauce, then baked. I love watching frugal cooks come up with something delicious using ingredients they already have.
