I don't know much about preservatives but it does not go bad quickly. You can refrigerate them if you are worried. My advice is to start your business small and increase the quantity as it grows so that you do not have to worry about leftovers.
Sorry to hear that. I think the sugar was burnt. if the sugar is burnt the coconut candy is going to taste a little bit bitter. Try not to burn the sugar the next time you make it. When it begins to turn black that means the sugar is burnt. Make sure you cook it on medium to low heat and stir the sugar if you discover that some parts are not melted but the color of the melted part is changing so fast (but do not stir frequently to prevent crystallization of the sugar).
