    I put a coffee filter over my gallon jar to ferment. Adds protection yet allows it to still breathe

      Exactly it’s perfect for letting in wild yeasties but keeping out bugs, pet hair n dust

      Hehe, I don't like/drink coffee. My brother was helping me move and saw my coffee filters and asked why if I don't drink coffee do I have coffee filters - for covering my brewing kombucha, of course.🤔

    I love homemade kombucha! I’m making my second batch now and I drink it on my eating days. FINALLY, after 5 years of eating keto I can finally use my honey again after I harvest it in my backyard!🐝. I’ve been a beekeeper for 9 years, but I gave my honey away to close friends and family the last few years. I also seen somewhere that the extra scobies can be used in the garden as a natural fertilizer. Thank you for the awesome video!🥰🐝

    I have been brewing my own kombucha for about 12 to 15 years and never ever wash the Scobies. It weakens them to where they’re not as active 🤷🏻‍♀️

      That is the WORST idea ever....it’s like washing your eyes with regular water....I’m sure that tap water has lots of chlorine to kill the starter!

      The pellicle mat (what you're calling a scoby) is a byproduct. It is not even necessary to the kombucha brewing process. Try brewing without the pellicle mat and you will see, your kombucha will produce another pellicle mat!

    I raw oyster the little scobys. Lol. The kids might like berries added to a 2nd ferment. I like hibiscus added to my black tea (50/50). Makes a great color too.

    I love my home brewed kombucha! I like to get a good carbonation with my second ferment after I bottle. I love my little scobys from the bottle. That's the healthy part!

    Previous to Ketosis O made my own & tried local brewed but both raised my body heat! I figured it was the sweetness & I’m sensitive to Black tea anyways. So I’ll be seriously careful and try only after my Keto sticks & blood sugars are lower. Overheated head at night is problematic; will try Glutathione beforehand. It’s easy to make as is fermented veggies.

      Just drink plain water after to rinse your teeth. It's acidic so you can have a lot of dental erosion very easily if drunk every day for months.

    Interesting process. I was a fan of making milk kefir. It’s similar to making kombucha

      Kefir is easier but I now have done it for so many years it’s in my brain! 😂 I brew two 2.5 gallons in my continuous brewers each week!

    I used to brew my own but lately I've been buying the Kirkland brand. Trying my new Keto-Mojo I just checked my blood sugar before and 30 minutes later, it jumped from 59 to 144. I've not used honey before, but I'll have to check the ph of what I'm buying.

    In my experience, if there is a fruit fly within 10 miles of me, it would find my kombucha, and once infested I don’t think the scoby can be saved. Always cover it with a dish towel, or even a coffee filter.

    Thank you for sharing!!! Where do you get or make scoby? Also what is the serving size and the number of carbs for tracking?

      You can ask around in a local Facebook group if anyone has one to share. And they say you can get a bottle of plain kombucha from a store and you can grow your own but it takes longer to do it that way. If you find someone to give you one then ask for 2cups of starter/liquid to go with it.

    I love you Dr Boz but you need to read the Big Book of Kombucha from Hannah Crum. Not a good idea to ever wash your scobies! Actually not a good idea to wash hands with regular water if you don’t then wipe in vinegar before handling them. Also flavored tea is bad for them and you could have mold issues. If you do that’s why. Also they need to be covered in a coffee filter and rubber band.

    I love kambocha but stopped buying it because of the sugar. I might try to make some. Can you set it in a sunny spot to help warm it? Or set it outside in the summer?

      I always add it to second and use a nickel size slice. I don’t think it really matters the size

    I can see where boiling honey kills anything that might compete w scoby. But then why honey? Bc it's not processed other than pasteurized?

    Question: If honey is an antibiotic in effect, will it have an impact on the scoby bacteria?

      I got mine from a Hutterite colony. I give away my extra to anyone in my area that asks... to restart the whole process I’d use the kombutcha from the store ...

      No the sugar is fermented and gas released, SCOBY eats the sugar, not the drinker.

    You ladies are working too hard. I ferment jun, which is kombucha's smoother cousin; it's also known as champagne kombucha. My SCoBY produces a gallon a week from a brew of 4 tsp of good, loose green tea, 1 cup of local honey and a piece of dried seaweed in 24 oz of hot water. Jun ferments faster than kombucha at a more forgiving temperature within a week; I use a 5qt pickling crock covered with a 1/4 piece of hemmed flour sack cloth. I use leftover jun for vinegar applications, so it's plenty tart. My SCoBYs calve like crazy so I know that they are happy. I drink it straight with Redmond salt.
    I tested my blood glucose before and 30 minutes after for a 10 point drop, my ketones dropped .1 point. That test was 10 undiluted ounces with no sweeetener or flavor added.

      Never heard of adding seaweed to a jun ferment. What is the purpose or reason to do that?
      Also, where in the brewing process do you add the salt?

    My mother believed that this helped her heal up a ruptured appendix the doctors refused to take out in her late 70,s.

      Its benefit was to beef up the immunity system so while the appendix was still leaking into the gut the doctors wouldn't operate. 3 months later rupture healed and I believe its still in there.

    The thing she is calling a SCOBY is actually a pellicle mat or a byproduct of the kombucha starter which is actually the scoby. SYMBIOTIC CULTURE OF BACTERIA AND YEAST.
    The scoby is in the pellicle mat but it not the scoby. You must have the SCOBY starter liquid in order to brew kombucha. The pellicle mat is not even necessary. You can toss that puppy out, cut it up and toss it in your mulch or snack on it. Just don't feed it to your dog, cat or other animals because it has caffeine in it from the tea!

    Great big EWWWW. Just dont think I can do it. I want to but I dont think I will. I also dont understand how we are on Keto and putting an entire jar of honey in the mix. This was suppose to replace her sweet tea fix. Looks more like aiding and abetting. Do I understand the sugar makes the bacteria then the bacteria eats the sugar?

      Yes.. fermentation of tea processes the sugar through the bacteria. Measure the pH of the tea to test your brew. Measure your blood numbers (ketones and glucose) to know how your body is handling the kombutcha

      SCOBY stands for symbiotic colony of bacteria and yeast. The scoby “eats” the sugar and makes the kombucha.
