I'm learning "fermentations", both wine and vinegar. So when I found your video on fermenting orange juice I had to check it out 👍.
I've heard of bitter orange before but I wonder how close this might come? I like the flavor of bitter orange. It adds a bit of brightness and complexity to recipes.
How did it age, if it got a chance 😁👍?

I didn't age it for long, but it turned out pretty nice. Not much bitterness,
I saw your video about fermenting sugar water saying orange juice wouldn't work but in the comments someone said orange juice was the best. I was sitting in a Walmart parking lot. I already mixed up the water, sugar, and bread yeast and went back in for Orange juice. I mixed it up yesterday and since I'm disabled and have the time to burp them, I'm fermenting under pressure in heavy duty clear plastic water bottles with screw caps. I started yesterday and I've been burping these jugs like crazy. When I burp them it's like I threw a mentos into soda before I close the lid again. My only mistake, 1/2 gallon of OJ had pulp that sticks to the head space of the jugs. When I open the caps it's like turning on the jacuzzi in the bottles before they try to erupt. Now I saw this video and had to share that OJ loves dilution and pressure.
Upon further review, it appears OJ is not as acidic as I had figured. Best of luck.

It works I yust got done with a batch, it’s pretty strong. That’s how they make hooch in prison.

I have used minute made orange juice and it works lol with lime extract. As yeast can live at 3 ph
Just use more yeast than normal incase some of the yeast dies.
I have to say, I was surprised how well it came out.
Hey platt. You da bomb! I just started a batch today but i mightve put in too much sugar. Also i peeled about 8 oranges and threw the oranges in the bottle. Along with half a bottle of maple syrup & half a pack of yeast... Within the first 12 hours it has lifted up like orange foam. Is this how it should look on the first day?
The foaming is part of the process, you should be fine.
Hey Platt. Looks like the other comments are gone but I fermented some more unpasteurized orange juice. It was sitting in my refrigerator for a good week and then I opened it and had a little bit to drink. From there I put the cap back on and let it sit out for almost four days. The fluid size is 52 fluid ounces (1.6 quarts) and I estimate I drank about 39 fluid ounces (1.2 quarts) in approximately 35 minutes until I started to feel a buzz. I am 6'0 and weight about 200 pounds and I don't drink at all. I definitely feel more than a buzz now since about 15 minutes has passed since I started feeling the buzz.
Also, nothing was added to the unpasteurized orange juice. It's just unpasteurized orange juice.
Sounds like my work here is done.

Are the yeast nutrients necessary? I missed those at the store and im not sure if its ok to skip the nutrients or not..
Also, is that a half gallon jug of orange juice?
You can throw in some raisins, that work as yeast nutrients.

What about Tampico juice citrus punch, orange tangerine lemon from concentrates naturally in artificially flavored?
If it has preservatives, it probably won't work.
I've tried this with two 1 litre bottles of pure orange juice - but after around 30 hours of fermenting as I write this, one of the bottles is looking very... odd. Like there's a whole load of really thick bubbly stuff at the top, so much that its almost at the top of the bottle now. The other bottle looks pretty normal to me.
So I'm wondering if you know what could be causing this and is it a problem? Should I empty out a bit of the juice to make more room in the bottle and then let it carry on doing its thing? Any help appreciated.
Take a flashlight to the bottle that doesn't have much foam, if you see bubbles are still rising then you should be fine.
@@PlattR thanks for the tip, just done that and it does have lots of bubbles in it, but I wouldn't say they're rising, just sort of sitting still. The less bubbly bottle does seem to have the same foamy stuff in it as the really bubbly one, it just looks less thick. And all that is in the upper section of the bottle, lower down it's just plain non bubbly juice. Sorry that this all quite hard to explain 😂

@@joegarnett5177 the exact same thing happened to a bottle of grape juice I was fermenting. I just stirred it back into the solution and it ended up great after a month 🤷♂️
With the spiralling cost of alcohol drinks, I'm looking to start making my own. Anyhow, I thought I'd try a little experiment today by putting some old lumpy sugar (about 0.25 Kg) to a half a bottle of 7.5% Cider (1 litre). Can I expect the Cider to get stronger? And will I need to add yeast? Or will nothing happen? Thanks.
If you had some wine yeast or distillers yeast, you could get a few more % ABV but at best you'll get it up to the low teens in ABV.

We used to do this with bread yeast way back in our teens.. it definitely works..
I've made plenty of wine with bread yeast.
I made mine , Tropicana oj mix with some spring water, champagne yeast, 3 weeks, freeze distilled last night, the shit smells super strong like hard liqour dawg, love from nova scotia ! 👌🔥
That hangover will hit like a Mack Truck.
I tried using orange juice made from concentrate and it ended up tasting like mildly fizzy vomit, I had to throw the whole batch away, not sure if it was a problem in the fermentation or that they'd added butyric acid to it and that doesn't break down but it was horrifically bad.
The fewer additives the better.
@@PlattR Yeah there wasn't any written on it, it was the first thing I checked, I heard its something they add to orange juice but don't need to list and butyric acid is meant to taste vomity well thats my theory at least.
Its possible it was some sort of contamination though it would be my first bad batch I'm a little wary of the OJ now I might give it another go using fresh oranges.

I believe no pulp but that doesn't really matter.

I don't have a hydrometer so do you think I could get a close amount of alcohol without adding sugar for 1 can of frozen orange juice?
Probably around 5%
i just eyeball a bit of sugar and hope for the best, he said a cups worth for that big bottle he has, i'd go off that in the future

You had the lid too loose in my opinion it probably killed the yeast and the sugar revived it by the luck of god happy brewing

Does it matter what kind of yeast I use
You can use pretty much any kind of yeast except nutritional yeast.
And lots of honey
You can also just add table sugar.
hi Platt, when you pour the yeast does it just sit at the top of the bottle and then eventually fall to the bottom of the bottle over the next several days? Im on day 1 and the yeast is just sitting right at the top
It will eventually fall to the bottom.

I have 1 at of tropicana and some active dry yeast will it work
Look for any preservatives, if there are none you should be good.
@@PlattR Its pretty much the same thing you have in the videos. 100percent pasteurized. I have a 1 qt. Poured a bit out. put 1/3 cup of sugar less that a 1/3 of the yeast. I'm going camping this weekend. Should be good enough by then?
@@anthonywapow3144 You will have produced some alcohol by this weekend but it won't be any good. Give it at least a full week but more like 10 days.

I don't see why not. Maybe lemon juice is a little more acidic, but it still may work.

@@adamyounis4231 It will take about the same amount of time. Some items ferment faster but not by much.

More sugar = more alcohol
Too much sugar overwhelms the yeast. Do an internet search.
Can I use refrigerated OJ or is it from the shelf
You can just make sure to have it a room temperature when you add the yeast and keep it out all throughout fermentation.

what happens if you just leave orange juice in the fridge for a really long time? Just pure regular Orange Juice, no yeast or anything added.
If you don't add yeast, you don't have alcohol.

@@4000marcdman If the orange had been open, then there is a chance that natural yeast in the air could've got in and starting doing its thing. Also, the bacteria that causes wine to turn to vinegar is present in the air too.

Is anyone ever worried about botulism during this process?
Botulism is a bigger concern with canned juices. It thrives in low oxygen environments.
@@PlattR Thank you, I started using apple and orange juice do to the acidity. I put 10ml of lime extract for every 1000ML to drop the ph to around a 3. My yeast is still thriving and botulism should not be abe to form due to the ph being lower than 4.6.
Also apple juice with the lime extract taste amazing if you ever decide to give it a try. I used active dry yeast but on my next batch I am going to order some different yeast.
If you have a sugar ratio for 20 gallons to 50 gallons of hard cider please lmk. The apple juice i usually get has 0g sugar but 28g of carbohydrates.
@@PlattR I also put a brass fitting in the lid with a tube running into some vinager water since I just ran out of bleach for an airlock. Seems to be going smooth as I have 2 gallons of orange juice going haha

The foam is a natural part of the process, you should be fine.
