Good catch Randy! I normally use the docker just before sauce in order to prevent bubbles. I missed that step in the video and I got lucky that the pizza didn’t puff much. If you like bubbles you can skip that step too. :)
Haha, that's fair! I don't always use pre-cooked sausage (or store bought sausage for that matter). I thought it would be the simplest way for most people to ensure it's well cooked in their home oven. I wouldn't want anyone getting sick from under cooked pork. That said, I'd love to hear about your favorite technique and sausage recipe!
Your video was nice and clean, but you cut away at key things, kneading of the dough and the removal of the pizza screen. You came from the peel to the counter , no screen. ??? !!!

Only on a 90 second Neapolitan pizza you can use pre cooked sausage……and I cook it about 80 to 90%.
