The secret to a good BIR is definitely a decent base gravy, if you get that right the rest should follow! Also using an aluminium pan helps to create caramelisation/flavour. Thanks for sharing!

I make about 20 curries worth of base gravy at a time and freeze it into containers, makes it super quick and easy when it comes to cooking a curry from scratch.

That looked great,I wish we had these mix’s,but we don’t.I make curry all the time,but can’t quite get it to taste like a restaurant one,I even have Bangladeshi friends,and they tell me how to make it,but even then it’s not the same, plus Bangladeshi curries are different from Indian curries,and I prefer the Indian ones.The names of curries in the UK seem to indicate how spicy the curry is, here the names generally indicate what is in them ,accept for vindaloo,but I have been to Goan owned restaurants,and there the vindaloo isn’t really hot,but more of a sour curry,which of cause is what the name means.

Hi Andy,when you reviewed the madras curry I ordered the 5 pouches,yes I agree with you about the takeaway comparison however we got chicken thighs from Aldi which we found tasteless,we are trying the jalfrezie today with better quality chicken from the butcher so see if it’s more enjoyable?
