Well first of all, I never flew in an 757, so in terms of flying experience, I can't tell. But there are of course technical differences between them. For example (as you said) size or passenger capacity. Also, because of the small body design of the 757, it's not able to load freight containers, one of the biggest disadvantages for an aircraft of it's range...
