    Ingredients
    300g Mutton Sukuti
    4 tbsp vegetable oil
    1 medium Onion
    1 medium Tomato
    1 green Chili
    2 red Chili
    2 tbsp randomly chopped spring Coriander
    1/3 Turmeric Powder
    ½ tsp red Chili Powder
    1 tsp Roasted Cumin powder
    ½ tsp Roasted Coriander powder
    1 tsp Salt or to your taste
    To infuse in the Oil in the beginning
    A few cloves
    Green cardamom
    1 Star Anis
    A small piece of Nutmeg shell
    Cinnamon Stick

    Pabs that looks great. Rehydrating the beef and cooking - guess open to many combinations. Any tips on drying the beef and the particular cut of meat? Keep cooking!

      Hi O Sossegado, thank you. Yes it opens and you feel like to continue eating its so delicious. You can use lean meat from any part. First you can cut the meat an inch wide in a long strip, add a bit of salt and give a light massage.
      Honestly I use exhaust fan above gas stove where somehow I was able to tie a string then hook the meat strips. It took me 6 days to dry properly. If you have an outdoor fire place to grill maybe you could arrange a stand to put above the fire to hang the meat strips. You don't have to keep fire on all the time only once or twice a day and make sure that the meat strips aren't sticking each other.
      I've seen an online meat drying machine, they are very with different, if you like check it out .
