im so happy you are putting a spotlight on this restaurant. the food is incredible, the space is amaaazing so open and breezy during the summer its super cool sitting at the bar. the drinks are also very good and overall there is just tons of creativity here. Not to mention the staff is so sweet and they all possess great talents! its a pleasure to eat here and right as you posted this video i was discussing going back to ilis in a couple of weeks.

how do you control quality/safety of ingredients that were foraged in uncontrolled environment? gotta make sure the plants didnt absorb some nasty stuff from pollution

The roadsides in an industrial area are less poluted than agricultural land. Lol the amount of chemicals over the past 100 years is insane. They used to fumigate the soil!

Our public health rules don't allow foraging when it comes to selling to the public with strict health regulations. Is it actually legal to do that in the States?

Try eating a good tomato in peak season versus one that's out of season and shipped from across the globe, the difference is huge. Every good restaurant works with the seasons for better taste and lower costs.
