Making etag is indeed an art, different municipalities in the cordillera have a different way of doing it. Not only for pig but for other animals as well. Some households actually use different types of wood (for smoking) para mabango and fruity. You can actually do it here in Manila (sun drying method) basta ilabas lang yung pork pag tirik na ang araw at isilong sa gabi. Hope you had the opportunity to take some of the black rice home, chef.
