Sarah, sorry to say, you toasted the Self-Raising Flour. the baking powder can't stand heat as once heated up, it will starts to function, that is why your cake didn't rise. May be you toasted the normal flour then add in 3 1/2 teasp baking powder 1 teasp salt -- the fomula of Self-Raising Flour -- 128 gm flour add in 1.5 teasp baking powder, 1/2 teasp salt.
Thanks for your input. Initially, I did have the same concern but still game to give it a try. So delighted when the cake came out good, it isn't dense nor crumbly. It was a very delicious cake 😊

Just use cake flour. If your flour already has baking powder, then no need to add.
