In regards to your accent changing as you greeted him: this is actually a really fascinating linguistics phenomenon called convergence! This is when your accent changes in order to reduce social distance, so presumably you subconsciously changed your accent to a South African one to try to sound friendlier to a native South African.
There's also the opposite of convergence, but I forgot what it's called. I notice both in my own speaking habits. My accent changes when I talk to people in parts of Austria that I am fond of, but I enhance my Austrian accent when I'm back in Germany, where I lived many years but never felt at home.
