How can we add a database , example catalog data etc , do we have options to integrate PIM, shipping, payment, tax, search etc. Or is it just for the page UI and UI components to create and build a page ?

I would be more interested to know how the headless architecture of AEM. Monolithic architecture is outdated and lot of my AEM clients wants to move to headless.
It's tricky question. We cannot see future so i would suggest do what intrest you most. If you like Java and coding you should choose aem. If you would like infrastructure management you must choose Azure
Creating: create new page, authoring: add components to page and style to give layout, testing page: check if page url opens as expected as per design in figma, validate: not sure may be form validation???

Demand for aem is good for now and expected to be good atleast for another 5 years. But these are just vendor applications and demand could go anytime. Hence i would strongly recommend we should be always learning developments in core skills like frontend and backend technology like spa, Java microservices and web development in general.

Yes. We can do it thru APIs. Aem has Java as backend. So you can pretty much do anything whatever you can do using Java.
