- Here's the super easy and yummy Fruit Cocktail Ice Box cake. Indulge with the not so sweet cake.
Here's what you'll need:
200g crushed biscuit-digestive or graham ( 2cups - 1 cup for the base and 1 cup for the 2nd layer)
40g melted butter-salted (4 tablespoon)
200g cream cheese (1 cup)
20g sugar (2 to 3 tablespoon)
300ml whipping cream or all purpose cream-chilled (2 cups)
1 teaspoon vanilla extract
500 grams fruit cocktail (drained) (3 cups)
some apricot jam (optional)

Instead of the biscuits/crackers my aunt used layers of vanilla sponge cake already soaked with the juices from the fruit cocktail. Delicious!!! 😋 This is the closest recipe I have seen to the icebox cake I grew up knowing and loved. 🎂 Thank you for sharing. May God bless you abundantly! ✝️🙏❤️

Ooohh. I wish I had known about this recipe when my kids were little.
When I was young my mother use to make a fruit cocktail icebox cake & I forgot how she did it. Now it came to me once I saw this. She did not use a springform but it is a pretty presentation using it. She included layers of Choc & vanilla pudding layers and whip cream & fruit cocktail like this recipe And graham crackers,
I THINK I AM going to make the cream cheese mixture as in this recipe and add choc pudding as a layer too.

Does the top cracker mix needs butter? It looks very loose and different from the bottom one. So it means that the butter is only for the base one?

What can I use instead of the whipping cream?

I am using chantillí without the heavy cream and the whipped cream.
Recipe I found in RUclips in Spanish so I try to translate:
2 cups of whole milk
2 eggs
1/2 cup sugar
2 tablespoons cornstarch
1 teaspoon vainilla extract
Peel of lemon
You can mix everything in the
blender except the lemon peel and once is blended put in your pot with lemon peel once is done remove the lemon peel and put it in the fridge for 2 hours cover with plastic touching the cream.
I use fresh fruits, mango, green grapes, strawberries, kiwi and bananas,. I mix this cream with vanilla pudding homemade instead of the cream cheese. Enjoy

Must try vanilla extract not the imitation kind as those have preservatives and do expire . Vanilla pods are soaked in alcohol ( vodka ) but u only use very minimal amount of the resulting extract - these do not expire with proper storage - sealed tight in a cool cupboard not close to cooking range or back of fridge . Do read the fine print because u could be deceived. 😊
