I cooked sucker one time, caught in the middle of the summer out of a river. I didn't know any better. It was the boniest piece of meat I've ever eaten, and the taste was mostly as you desribed. They are pretty good smoked though!

They are much better pickled and the meat firms up. As a kid, we would get 5 gallon pails full and pickle them.
