    The water balloon tomato made me laugh, I’ve learned to always core or score every tomato 😊
    I’ve also learned all that “water” from those tomatoes is actually usable, it’s a weak tomato juice, I use it to make V-8 (or V-15) juice at the end of the season with every odd and end vegetables that haven’t been used, purée them with that tomato water and it’s an excellent juice, soup base or whatever !!! You could use it instead of water to mix into your clear gel. I’m so excited to learn I can thicken ketchup with clear gel instead of cooking it forever !!!
    Oh and also, if you put a cup or two of water in the roaster then put the pan in, it helps it to cook more evenly and prevents scorching but be careful, steam comes out around the edges.
    Your children are so fortunate, they will never know just how fortunate they truly are even after becoming adults and being grateful for the life and skills you have given them, you are truly a beautiful blessing ❤

      I save my tomato water/juice too. I have learned to use all kinds of leftover liquids and broth. I just used some of mine to cook up some lentil soup and I like to use it for cooking my rice too.

    • @EarlyMusicDiva
      @EarlyMusicDiva 2 месяца назад +1

      I like to do that too! When I make tomato sauce, I like to dip out the free-flowing watery juice with a ladle while the tomatoes are cooking down, and put it through a regular strainer into a pitcher (so I know how much there is and can get out the right number of jars), and just water-bath can it up (40 min for quarts, 35 for pints, at sea level) with a teaspoon of sugar, a teaspoon of canning salt, and half a teaspoon of citric acid per quart - half those amounts for pints - to drink or use later. I tend to water down all my juices before drinking them anyway, having grown up in a large family where we had to make sure there would be enough juice for everyone to have some, so I don't mind the extra wateriness. :)

    Hi Ruthann: you are one hard working woman. I understand that “That 1870’s Homestead” channel with Rachel and Todd, that Rachel has a great recipe for making ketchup. She was so pleased with it as it took her awhile to get it exactly like she wanted it. You may have seen their channel already. But, if you haven’t, I encourage you to pull that recipe up and see what the difference is. Maybe combined, or using something from her recipe will help you arrive at a recipe you will enjoy. My mother made ketchup ONCE! She swore she never would again, and she didn't!😂 I helped her with the canning, and I saw what she went through. She didn't use a thickening agent--that would have saved her some time. I used arrowroot powder in my pie fillings last year, and it did lots better than regular corn starch. It didn't separate. I have used the Therm-Flo also, and it's great. I get it at the German Baptist bulk food store, along with lots of other wonderful items, and shop the farmer's market for things I didn't grow. My 9-year-old grandson and I went there for apples this morning, because he wanted to make applesauce with me. We made 3 quarts for him to take home. And yes, he did help! That will make it taste better. ❤

My mother had 7 siblings and they and they're families would all come to my grandparents to see us and it would be one big potluck. I married into a family of 12 kids of which my wife is the youngest. We would get together for the holidays with her large family and it was always awesome to see everyone and also eat all of the delicious foods. My mom and all but one of her siblings have passed, my wife's parents have passed and we only gather at Thanksgiving so all that is left is memories now. I am so thankful to have been a part of these large families! Please cherish and enjoy these times as they are always gone too soon.

    This year due to time conflicts, we had to freeze a lot of our garden tomatoes. A couple of weekends ago we were able to process them into tomato water that you can use to cook rice or noodles and a very thick paste. The frozen tomatoes were put into a large pot with a small amount of water and cooked just enough to get the tomatoes thawed and to release their water. We then strained the cooked tomatoes through cheese cloth. This strained water is what we can as tomato water that we cook with. We use a Ball electric tomato strainer that does a really great job separating the skins and the seeds from the pulp and we were left with a rather thick tomato sauce, more like thin paste, that would make wonderful ketchup after you had added the spices, sugar and vinegar with very little cooking needed to thicken it. We were impress and the next time we need to make ketchup, this is what we will be doing. Enjoyed watching your version of ketchup making.

    Your channel and reduced ad breaks is truly a joy. I also jump off other videos if I see yours. Excellent job! Way to confront a “Karen” comment. I find those comments very annoying and you handled it so well. God bless you and your family for letting us share in your home life. ❤️

    Watched your video while cutting, pitting, and cooking plums for plum butter. I'm so excited for my roma tomatoes to ripe. I will try your ketchup recipe. I've been looking for one I can preserve. I love that you wash out and reuse your baggies. I do that, too, and kids think I'm so odd.

    I decided to try pruning my tomato plants for the first time this year. I grow Amish Paste, Opalka, and Roma. Normally, I have many small tomatoes on my plants, but this year, they were fewer and HUGE! I am ridiculously pleased! 😅 Processing is so much easier and faster when they are big! I am enjoying your videos so much. You are very knowledgeable and explain everything so well. 😊

    I mix the sugar with the perma flow. It’s easier to add without clumping and it doesn’t scorch that way.

    Hey Ruthann, I learned from market farmers to pick tomatoes when they first blush and ripen indoors... it better ensures consistent undamaged tomatoes. Clearly the Roma or Amish paste are better for sauce and ketchup, but you can't beat a good beefsteak for slicing and salads. 😊

    I have a freezer that is packed full of frozen tomatoes. I have to do it this way, because there is no way I am going to process them in Alabama summer heat. In a few weeks when the weather cools, I'll start thawing them, and make salsa, tomato sauce, and tomato soup. I have frozen diced peppers that I'll be usign too. Onions didn't do good for me this year, so I have to purchase them. I planted them too shallow; they lost their footing, and laid flat. That was the end for them. Next year, I'll direct sow the seeds, and not have to worry about it. This fall, I am growing parsnips, carrots, beets, turnips, red cabbage, Dutch Cabbage, Nappa Cabbage, Swiss chard, Komatsuna, Tatsoi, Yellow Heart Winter Choy, Pak Choi, broccoli, and cauliflower. I am still picking strawberried and peppers.

    Tomato paste works great for thickening salsa and spaghetti sauce. Add it in at the end and let it simmer for 30 minutes. Stir often as it can easily scorch.
