    Great tips. Just bought a large pork loin. Glad this was presented. Best to wipe your knife immediately after honing so as not to get metal shavings into your food. Next time you hone your knife wipe it with a damp paper towel and you'll see the shavings.

    Ladies and gentlemen, this is a professional butcher doing a marvelous job with this pork loin! Pay attention and learn from him.
    For home butchers, here are key tips in this video which were shown but which a home butcher might miss. One, your knife MUST be sharp, really sharp to do a good job for you. Then let the knife do all the work. Don't "saw" back and forth with the knife. If you have to do that, your knife isn't sharp enough.
    Two, be safe and sanitary at all times. Wear gloves. You don't need a "cut glove" necessarily but you MUST be careful about how you hold the meat and where your fingers are at all times. Don't rush and concentrate on your work. Wash and sanitize all your utensils thoroughly along with your cutting board and cutting table. Bacteria grows easily on pork and can be transmitted to other foods in the kitchen if you are not careful. Don't use a knife to slice the pork then cut something else with it. Sanitize it first. I like to keep some bleach based wipes handy.
    Three, it helps to chill the meat until it firms up a bit before butchering. Butchers keep their meat in a cold storage locker so when they take it out to cut it is already chilled. You can put it in your home freezer to chill and firm the loin before butchering but do not let it freeze. Notice also that holding your hand against the meat helps make a nice, even cut. Don't let the meat flop loosely and fall over while you are cutting it.
    You can save money by buying full sections of meat such as a full loin and butchering it at home. Best of all, you can cut the meat to your liking. Give it a try.

    I cut whole pork loins and all other types of pork and beef all day everyday. I work in the meat department at Save-A-Lot. You cut as much meat as I do and you get sick of eating meat lol
