    Trish to answer your question at 26:05 vegetable oils are “bad” because they cause inflammation in the body. They are extremely high in omega-6 fatty acids (which the American diet is already too high in) which throws off the body’s omega 3:6 ratio thus causing inflammation, anxiety, and other health problems.
    Additionally, cooking certain foods at extremely high temperatures (such as frying) causes a Maillard chemical reaction and the formation of acrylamide. Acrylamide is a known carcinogen.
    This doesn’t mean you should avoid oils at all cost and never enjoy your favorite foods, just try to enjoy in moderation and incorporate high omega-3 foods daily, like salmon, leafy greens, and flaxseeds 🤗❤️

    always let the butter melt before adding the flour and always do equal parts flour to butter. so 50g of butter means you do 50g of flour, then you add the milk in slowly constantly whisking so get the sauce very smooth and can always add more milk as you go! hope this helps🤍

    Trisha! You used too much pasta! Use half that box next time. Also when making cheese sauce follow recipe. 2/2/2/2 , 2 tablespoons butter, 2 tablespoons flour, 2 cups milk ,2 cups cheese. Follow exactly
    For great sauce. Use sharp cheddar if you like instead of regular cheddar.

  • @pepperm3466
    @pepperm3466 Год назад +115

    Tips for this recipe :
    When making the cheese sauce, it's important to follow recipe exactly. Don't throw in extra flour or butter. I believe Trisha used too much pasta, so there's not a lot of sauce. I'd go with maybe half as much pasta. Or double the sauce recipe. Instead of making into balls, just line pan with saran wrap, put in mac and cheese, stick in freezer. Instead of forming balls just remove the mac and cheese from pan using the saran wrap, then cut into squares the size you want, proceed with the breading and instructions for the recipe. It's just squares instead of balls. Canola oil is healthier to fry with than vegetable oil.

    • @ginabennett5906
      @ginabennett5906 Год назад +9

      Yes, I tried commenting this on another recipe but she always used a whole box of pasta & then says there isn’t enough sauce but it’s because the recipe probably didn’t use a whole box of pasta🤷🏼‍♀️ she will get it one day!

    What you did in the beginning is called a roux. You only up the size if you're making a bigger batch. A roux is always supposed to be equal parts fat (butter) and equal parts flour...also you shouldn't rinse your noodles. The startch on there is what makes the sauce stick and when you rinse it, you rinse off the startch. Saying this with love.

    The butter and flour mixture is called a rue. Rue is used to thicken sauces, not to bind things together. To bind it together you would do that after it’s frozen by rolling in flour, then egg, then bread crumbs.

  • @japaneseninja33
    @japaneseninja33 Год назад +1

    If you want a sauce that oozes out, try using less roux. When I make chicken croquettes, my ratio is 3 T flour 3 T butter to 1 cup liquid.
    Since you’re using cheese which will thicken up the sauce you can try a ratio of 2-2 1/2 T butter and flour per cup of milk and they were turn out less dry.
    I make Japanese croquettes with potatoes, cooked ground beef ( you can sub ground turkey too), and sautéed onions, carrots, and cabbage, all finely chopped. Super easy to make. You use a sauce called “tonkatsu sauce”, but if you can’t find it, mixing ketchup and Worcestershire sauce together works in a pinch, which you drizzle after the croquettes are done.

    • @japaneseninja33

When making the sauce I add gochugaru pepper powder, onion powder, mustard powder, salt, all spice, black pepper, chipotle flakes, mirin, prepared yellow mustard, and potato starch instead of flour gives it's a smoother texture. Cook it all for 2-3 minutes add milk (1.5L - 2L), let it re-heat, add in cheese (500g - 700g) stir constantly until melted (this can take like 15 minutes). boil 500g of pasta noodles. and I make a topping with salted butter (1/2 cup) and panko crumbs (2 - 2.5 cups) by browning them in a pan then I bake the whole thing for 20 minutes at 450 in two 9x9 pans

    Tips for breading:
    Use smaller containers but big enough for the item being breaded. I find those disposable plastic Tupperware types work best, when you put item in the flour shake the container and coat the item, when you take out of flour be sure to shake off excess flour, dip into egg mix turn container to coat, remove item let excess egg mix drip off, put into bread crumbs, shake to coat then using your hand grip some bread crumbs and press into item. Use 2 hands to press crumbs into item. Then carefully set aside, when finished breading all items put back in freezer for 5 or so minutes uncovered to help dry out the items b4 frying. B4 you put each item into oil tap the item so any loose crumbs fall off and don't fall in oil. Then put item in oil to fry.

    Try keeping the sauce more liquid-y trish, so it gets creamy instead of super thick and paste-like. A lot of cooking is just adding as you go
