The great Neapolitan pizza maker Diego Vitagliano, after having opened his pizzeria in Naples, Pozzuoli and Qatar, has also recently opened in Rome in the northern area (Corso Francia near Ponte Milvio).
His famous pizza is extraordinary, it is light and highly digestible, soft with a little crunchiness, made with an indirect dough with organic type 1 preference, a leavening of 36 hours, high hydration and a very low quantity of salt. All of course with high quality raw materials.
His pizza makers at work look like the mechanics of the Scuderia Ferrari. What a formidable team, a sight to see them at work!
The beautiful pizzeria in Rome is a building with 300 seats (150 indoors and 150 outdoors), 4 ovens (1 of which is dedicated to the gluten free service!). Great attention therefore to gluten-free pizza.
The number 10 in front of the name is in honor of the great love for Maradona, of him but above all of his father who passed it on to him. It is also linked to the first review of his pizzeria by a Naples newspaper who wrote that Diego Vitagliano's was a 10 pizza.

I really enjoy watching the pros make pizza. A suggestion if you don't mind. Would it be possible to put subtitles for ingredients. There are cream sauces or other sauces / condoments that they put which we have no idea what they are. Awesome video keep them coming :)
thank's my friend! Thank you very much for appreciating the videos I offer. I try to offer the best. Obviously you're right, I should put all the ingredients but it's not easy. Sometimes they go so fast, there's so much confusion and the director looks at you badly because you told him 5 minutes but you've been in the middle of the boxes getting in the way of their work for 1 hour and it's hard to expect them to explain everything you see. On the other hand, I choose the best, only the best pizzerias, where they therefore don't need advertising and would just like to work without having you around 😆 This is the harsh reality! Or should I go there in dead hours where, however, I would make a boring video with two pizzas just coming out. I prefer to capture the atmosphere of the pizzeria. However I will try to do better and always ask for ingredients and write, obviously just write down the name of the pizza and then I'll look for it on the menu. Well, let's see. The finish product looks excellent...but rushed. There is no reason that before it goes in the oven that the ingredient's are more spread evenly throughout the pie. Cheese..basil..etc.

Io sono la persona che ha girato il video e di sicuro non è simpatico pagare il coperto ma questa è una cosa che riguarda quasi tutte le pizzerie e i ristoranti in generale. A proposito di tovaglietta comunque c'è da dire che l'ho inquadrata nel video perchè è troppo carina questa del Napoli Campione! un caro saluto
