Now I know why always my madeleines turn out burnt... I use a dark non stick coated Wilton madeleine pan... next time I’ll adjust time and temperature :)
Hello! I recommend finding recipes developed for high altitude baking. Unfortunately, because we are in the Midwest, its difficult for us to develop recipes for that region. However, there's lots of information available online. Sometimes its a matter of trial and error. Happy baking! -Stephanie

pagan22 no problem. I didn't want to put anyone off but you really can taste the silicone flavour whereas with the metal you can't taste it at all 😊
