If you slide your knife/iron over the firesteel you push forward your knife and thuis immidiately extinguish the ignited material. Its beter to withdaw the firesteel over your knife instead.
I’ll have to pullout my Firebox G2 and Roma pie iron and give that one a try. Looks pretty tasty
