TL;DR Ashe is my first option for payload and hybrid maps. Sojourn is my first option for control and push maps. The best solo carry heroes you listed are Sojourn and Ashe because their neutral fight is really strong. Ashe is arguably better carry because of Bob, but Sojourn's neutral fight is the best. Soldier plays very similar to Sojourn, but if you can't land the railgun 40% of the time, he's a great second option. Hanzo can be a game changer if you can pick off squishies regularly (openning kill or finishing kill during midfight). Problem is if you don't, then he's useless.
Trading Bastion's ult for Bob is pretty good. Just remember the risk of using it which makes Bastion stand still. Using your assault form in response of Bob is not worth it because Bastion is no longer a threat without it. You can do very high dps just by using your primary fire and shooting Bob in the head. He'd be a good counter for Bob, so yes.
