Sao Mai 🇲🇺 | Pork Siu Mai Recipe

  • This is our version of the Mauritian style Sao Mai 🇲🇺 | Siu Mai. It is a traditional steamed dumpling served as a snack in Dim sum or Yum cha.
    Yield: 50 Sao Mai
    Preparation Time: 45 Minutes
    Cooking Time: 20 Minutes
    ~ Recipe ~
    INGREDIENTS
    - Pork or Chicken Mince 500g
    - Wonton Wrappers (Wantan) 50
    - Chokos (Chouchou) 250g
    - Carrot 150g
    - Water Chestnut 100g | 10
    - Dry Black Fungus 20g
    - Corn Starch or Tapioca Starch 2Tbsp
    - Fish Sauce 1Tbsp
    - Salt 1tsp
    - White Pepper 1tsp
    METHOD
    (1) Soak the Dry Black Fungus in water for 10 minutes, then drain the water and chop into small pieces. Set aside.
    (2) Wearing gloves, peel the Chokos, rince under cold water then dice into small cubes. Set aside.
    (3) Dice the Water Chestnut and Carrot into small cubes. Set aside.
    (4) In a large mixing bowl, add the Pork mince, Black Fungus, Diced Chokos, Diced Water Chestnut and Diced Carrot. Add the Fish Sauce, Salt and White Pepper then mix well to combine.
    (5) Add the Corn Starch, then gently mix and press with your hand until well combined and slightly sticky.
    (6) Use the mix to make about 50 individual Sao Mai (as shown in the video)
    (7) Brush your steamer trays or baskets with vegetable oil so that the wrappers don't stick to the surface while cooking.
    (8) Steam for 20 Minutes. Then Enjoy!
    * Season with some Fish Sauce and garnish with spring onions. Serve with some chilli paste!

      Hi, Water chestnut is a root vegetable found in Asia. In this recipe, we used Water chestnut can that can be found in your local Asian store (Hong Kong store).

    What can I use instead of chouchou?

      Hi Patricia, you can replace the chouchou by any vegetable you wish including carrots, zucchini, potatoes, mushrooms or even make it with just meat. You can customize the stuffing as per your preferences 😉
