This is so fking awesome. I had taken a 9 year hiatus from sim racing and gotten back into it a year ago with mediocre rig (NLR beach chair) with CSL DD for now and been looking to get back into it with more hardcore equipment. Had considered 32:9 monitor (like you have) or even triple but then realised why not VR maybe now. Back then, last VR headset i had tried was the Oculus DK2 which i knew at the time, needed at least a decade before it would be ready and here we are, literally a decade later, lol. And now that I regularly go karting and every month a track day at locations like Oulton and Donnington, I had been thinking about the gap in perspective feeling between real life and monitor I am so freak'n sold.....My body is ready! I have exact same spec PC as you except a 3080 Ti but will upgrade to 4090 now for this.
I can highly recommend this headset for you if you haven't bought into anything yet! Even worth trying on the 3080 honestly. I believe unless your streaming (as they steer away from vr for good reason), there's nothing better atm.

I have made an updated video for this mate if I could put you to the latest. 120hz is personally huge difference for me in racing particularly. Compared to 90hz it gives me more information and information is speed for me :)
I don't really want to do one right now in its current state. I can already say that this is going to be the best headset money can buy currently. The only caveat is for those with narrow heads and IPDs, I believe there is some work to do here comfort wise.
Only thing stopping me is the fact I'm using beta software not available to everyone currently! A general guide can be found in my setup. Just make sure to disable dynamic objects, hdr and mirrors. These 3 are huge GPU taxxers and that's where you need to find some gains typically

I do it for the frame rate! I appreciate people who go for full immersion but I am here for aids if there built in!
