This was SOOOO good... it's so refreshing and also so easy to make. The dressing is simple and the citrus juice adds a great tang. Watching your skilled hands makes it so much easier to make. We ate it with a rich lemon ricotta gnocchi and the salad was a perfect balance!

What a great winter salad! So refreshing and beautiful! Maybe a tiny bit of mint leaves for color?

What a great idea! I think that adding mint leaves would add color and taste to the salad. When available, I would also make the salad with arugula and other greens.

I made it to go with tamales. A perfect pairing! Persimmon Citrus salad is colorful for Christmas. I used endive. Thanks dianas Table_ for this simple yet elegant recipe!
