So I tried to make this today, and was expecting a disaster. There's no way this recipe would work, I thought. I get the dough started, put cold milk thinking this is gonna go so bad, never made a yeast dough with cold liquid. I follow instructions and mix it but it doesn't look like in the video, I think - yeah, gonna be a disaster. I let it grow thinking it's gonna be weird cause it's not filled with my sweat and tears and extensive kneading. 90 minutes later I am greeted with a fluffy, bubbly dough... to my surprise. Might be good, but doesn't look smooth like the video, I can still fuck this up, I thought. The dough is so soft, I bet it's gonna be a mess to roll and braid. Turns out, as soft and sticky as it was, it rolled with no problems. I even managed to braid the thing. And after placing it in the baking pan upside down (pretty side down) I thought, this will definitely ruin it. Not only is it gonna taste bad but it's also gonna look bad. As it bakes, the chocolate starts leaking out of the baking pan cause the dough is growing like a monster. I'm not surprised, I am expecting disaster after all. Finished baking, looks like a huge golden monster in the (much too small) pan I used. Do the syrup, plop it on top. The monster babka all chilled now, try to cut a slice and it's stuck to the bottom a bit cause some of the chocolate melted on the bottom... I take a bite and another, desperately looking for the disaster. But it's not there. What the hell? Why is this so tasty?! So fluffy??? So freaking perfect?!!?!!! Such a perfect sweet crust on top?!!!! What is this sorcery??? Been afraid of yeast doughs my whole life but this changed today. I was expecting a baking disaster but the recipe is so forgiving. Hat off to you guys for coming up with this magical dough. PS: This can be easily devoured by two people in less than a day.

What did I do wrong? It's in the oven now so I'll see what my finished product looks like. I already know I want to try it again!

Yep! I’ve made it twice and couldn’t stop eating it so I had to slow down! I made it with maple syrup and Swerve instead of sugar so it was a little messy, but worth it.
Hi! Great video, have you tried sourdough? Can i make it with sourdough? What would be the equivalent? I wonder because my body gets ill after eating bred with yeast so I have turned to sourdough instead to help my body and it has worked out perfectly with other breads.

You only need to proof it a second time if it's lower that the top of your pan

Make It Dairy Free I was able to make adjustments and it is pure perfection. It’s a big hit in our house and I make it at least twice a week 😊
