Eggplant kebab is a Turkish kebab that can be prepared according to various traditions.

Eggplant kebab consists of pieces of eggplant layered in rows with finely chopped (not minced) meat such as beef and lamb. It can be put on a skewer and cooked over a fire. Baked eggplant kebab can be made with ingredients skewered on a plate or arranged in a round pan, with spices such as black pepper, and eaten with raw onion and a soft Turkish bread called yufka or lavash. In Şanlıurfa and other parts of Southern Turkey, people traditionally prepared a tray of eggplant kebabs at home from leftover eggplant and chicken meat, then took them to a local oven to be cooked over a wood fire.
